8's new Executive Chef's classic Mediterranean
style of cooking seamlessly blends the flavors,
ingredients, and seasonings of Italy, France,
Spain, and the Middle East.
Chef Burbella graduated from the Culinary Institute
of America, and has worked in the kitchens of
his mentors, Alfred Portale, at Gotham Bar &
Grill; Tom Colicchio of Gramercy Tavern; and throughout
Europe in 2- and 3-starred Michelin restaurants.
Prior to joining Table 8, Burbella was opening
chef at Lamu, Ora, and the Grand Tier Restaurant
at the Metropolitan Opera (all in Manhattan).
